Course Content

This unit explores how grapes are grown and how winemaking decisions shape the final style, quality, and value of wine.

Key areas of study include:

  • Vine structure and growth
An overview of the vine’s anatomy and grape development, providing essential context for understanding vineyard and winemaking decisions.
  • Viticultural choices and vineyard management
An examination of different grape-growing approaches, including how viticultural practices influence yields, grape quality, and wine style.
  • Environmental influences in the vineyard
A study of natural factors such as climate, soil, and site conditions, and how they affect the vine’s capacity to produce grapes for wines at varying quality levels, styles, and price points.
  • Winemaking and post-fermentation techniques
An analysis of key winemaking decisions after harvest, including fermentation and post-fermentation options, and how these choices impact wine style, quality, price, and market positioning.
